30 Minute Fluffy Dinner Rolls

These rolls are for the days when you want fresh homemade bread but absolutely don’t want to wait two hours for dough to rise.

I make these whenever I’m craving something soft and pillowy to go with soup, pasta, or even just as a little snack with butter and jam.

They have that glossy bakery finish, the soft pull-apart texture, and honestly, people will think you spent all afternoon making them.

Whether you’re cooking for guests or just treating yourself on a busy evening, these quick rolls feel like magic every single time.

Please note I’m adding variations and substitutions after the recipe.

Ingredients

  • 1 cup warm milk (not hot)

  • 1 tbsp instant yeast

  • 2 tbsp sugar

  • 2 tbsp melted butter

  • 1 large egg

  • 3 cups all-purpose flour

  • 1 tsp salt

  • 2 tbsp melted butter (for brushing)

Directions

  • Step 1: In a large bowl, whisk together warm milk, instant yeast, sugar, melted butter, and the egg until everything looks smooth and combined. The warmth of the milk helps activate the yeast quickly, and the egg gives these rolls their soft structure without needing a long rise.
  • Step 2: Add the flour and salt, then mix with a wooden spoon or spatula until a sticky dough forms. Knead by hand for about 2 minutes (just until smooth) or use a stand mixer if you prefer. The dough should be soft and slightly tacky but easy to shape — that’s what gives the rolls their tender texture.
  • Step 3: Divide the dough into 12 pieces and shape each one into a smooth ball by tucking the edges underneath. Place all the dough balls into a parchment-lined baking dish, leaving a little space between each so they can rise and touch, creating that perfect pull-apart look.
  • Step 4: Let the rolls rest for just 10 minutes while the oven preheats. This short rise is surprisingly enough because the dough is warm and activated, helping the rolls puff up quickly. Brush the tops with a bit of melted butter for a shiny golden finish.
  • Step 5: Bake at 375°F (190°C) for 15–18 minutes until the rolls are beautifully golden. Brush again with butter straight out of the oven so they stay soft and get that irresistible glossy glow.

  • I love this with soup and it mops up sauce really well too!

Variations & Substitutions

  • Honey Butter Rolls: Add 1 tbsp honey to the dough and brush warm honey-butter on top.
  • Garlic Herb Rolls: Mix 1–2 tsp garlic powder and dried herbs into the dough or brush herb butter after baking.
  • Vegan Option: Use plant-based milk, 2 tbsp neutral oil instead of butter, and skip the egg. Rolls will be slightly less rich but still soft.
  • Whole Wheat Version: Swap 1 cup all-purpose flour for whole wheat; add 1 extra tbsp milk for moisture.
  • Cheese Rolls: Add shredded cheddar or mozzarella inside each dough ball before shaping.

These 30 Minute Fluffy Dinner Rolls are one of those recipes you’ll come back to again and again. They’re fast, easy, and taste like something you’d get from a bakery.

Whether you’re serving them with a hearty soup, a holiday feast, or just enjoying them warm with butter (my favorite way), they bring instant coziness to any meal.

If you try them, you might find yourself making them weekly… or daily. They’re that good.
