Tips to Make it Even Better!

Ingredients

  • 1 cup rolled oats

  • ¾ cup unsweetened almond milk (or milk of choice)

  • ½ cup plain or vanilla Greek yogurt (or plant-based yogurt)

  • 1 tablespoon chia seeds

  • 1 tablespoon maple syrup or honey

  • 1 teaspoon vanilla extract

  • 1 cup fresh strawberries, divided

  • Optional: pinch of salt

Directions

  • Start by washing and hulling your strawberries.
  • Dice half of them and toss into a blender with the almond milk, yogurt, maple syrup, vanilla extract, and a tiny pinch of salt. Blend until smooth and light pink.
  • In a jar or bowl, stir together the oats and chia seeds. Pour in the blended pink strawberry mixture and stir until combined.
  • Fold in the remaining diced strawberries for texture. Seal the jar or cover the bowl and refrigerate overnight.
  • By morning, you’ll have a creamy, dreamy, pastel-pink jar of strawberry oats that looks like dessert and tastes even better.

  • I personally love this when I’m too lazy to cook the next day.

Substitutions and Add-Ins:

Swap strawberries with raspberries for a deeper red color and tartness.
