Brown Sugar Cinnamon Iced Latte (Oat Milk)

My partner loves coffee so much that I regularly experiment with different coffee recipes. I’ve put a whole lot of them in this fall coffee recipe list.

So this recipe includes brown sugar and cinnamon – it’s warm, cozy and very fall-themed I feel.

If you’re the kind of person who lights cinnamon candles year-round and secretly wishes every season could be fall, then this Brown Sugar Cinnamon Iced Latte will steal your heart.

It’s rich, smooth, just the right amount of sweet, and totally customizable whether you’re dairy-free, sugar-conscious, or just want to whip up a barista-level drink in your own kitchen.

It’s made with real ingredients, no weird chemicals, and only takes a few minutes to whip up.

Tips for Making It More Magical

Getting the balance of flavors and colors just right is key. Here are a few essential tips to keep in mind:

  1. Use a milk frother like this one for an ultra-smooth pumpkin mixture.
  2. For a more complex flavor, use dark brown sugar instead of regular brown sugar
  3. Always brew your espresso fresh—instant espresso works in a pinch but nothing beats the real deal
  4. Want an extra silky texture? Use barista blend oat milk.

Let’s get to the recipe!

Ingredients

  • 1–2 shots of espresso or ½ cup strong brewed coffee, cooled

  • ¾ cup milk of choice (dairy, oat, almond, soy, etc.)

  • 2 tablespoons brown sugar (or to taste)

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon vanilla extract

  • Ice

  • Optional: cinnamon stick or extra ground cinnamon for garnish

Directions

  • Start by making your brown sugar cinnamon syrup. In a small saucepan or microwave-safe bowl, combine the brown sugar, cinnamon, vanilla extract, and 1 tablespoon of water. Heat gently and stir until the sugar dissolves and it smells like heaven. This should only take about a minute or two. Let it cool slightly while you prep the rest.
  • Fill a glass with ice, then pour in your freshly brewed espresso or strong coffee. Add your brown sugar cinnamon syrup and stir well until the coffee takes on that beautiful golden swirl. Pour in your milk of choice and stir again. Watch the magic happen as it blends into a creamy, sweet, spiced masterpiece.
  • Garnish with a sprinkle of cinnamon on top or even a cinnamon stick if you’re feeling fancy. Drink immediately, preferably with a side of peace and quiet—or a good playlist.

  • I personally love making this when I want to feel cozy.

Variations and Substitutes:

Swap brown sugar for coconut sugar or maple syrup for a slightly different sweet profile
Use decaf espresso if you’re just in it for the flavor, not the caffeine
Make it a hot latte by skipping the ice and steaming the milk
Add a splash of caramel syrup or a pinch of nutmeg if you want to take things to the next level
Make a big batch of the brown sugar syrup and store it in the fridge for up to a week

This is such a tasty drink.

I love that it looks like a complicated Pinterest drink, but secretly it’s the easiest thing ever.

Enjoy!
