These fluffy buttermilk pancakes are so good!

Golden, thick, and tender with just the right balance of sweetness and tang.

Don’t skip the buttermilk—it’s the secret to that tangy flavor and ultra-fluffy texture. If you don’t have any, make your own using buttermilk powder or by mixing 2 cups milk with 2 tablespoons lemon juice or white vinegar.

Use a quality nonstick griddle to cook multiple pancakes at once without sticking or uneven browning.

For extra fluff, let the batter sit for 5–10 minutes before cooking to activate the leavening.

Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 cups buttermilk

  • 2 large eggs

  • ¼ cup unsalted butter, melted (plus more for greasing the pan)

  • 1 teaspoon vanilla extract

Directions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl or large measuring cup, whisk the buttermilk, eggs, melted butter, and vanilla extract until fully combined.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined—it’s okay if there are a few lumps, just don’t overmix or your pancakes may turn out tough instead of fluffy.
  • Heat a large nonstick skillet or griddle over medium heat and grease it lightly with butter or oil. Use a ladle or ⅓ cup measuring cup to pour batter onto the hot surface.
  • Let cook until bubbles form on the surface and the edges look slightly set, about 2–3 minutes. Flip gently and cook another 1–2 minutes on the other side until golden brown.
  • Repeat with the remaining batter, greasing the pan as needed between batches. Serve hot with butter, syrup, or your favorite toppings.

Substitutions and Add-Ins:

Swap all-purpose flour with whole wheat flour or oat flour for a healthier twist (note: texture will be slightly denser).
