Ingredients

  • ½ cup pumpkin puree

  • 2 large eggs

  • ⅓ cup almond flour

  • ½ teaspoon baking powder

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon pumpkin spice or nutmeg

  • Pinch of salt

  • 1 teaspoon vanilla extract

  • Optional: 1–2 teaspoons sweetener of choice (monk fruit, stevia, or maple syrup)

Directions

  • In a medium bowl, whisk together the pumpkin puree, eggs, vanilla, and sweetener (if using) until smooth and well combined.
  • In a separate bowl, mix the almond flour, baking powder, cinnamon, pumpkin spice, and salt.
  • Slowly stir the dry ingredients into the wet mixture until no lumps remain. The batter will be slightly thick—let it rest for 1–2 minutes so the almond flour can absorb some moisture.
  • Heat a nonstick skillet or griddle over medium-low heat and lightly grease it with oil or butter. Use a ¼ cup scoop to pour the batter onto the skillet. Cook for 2–3 minutes or until bubbles start to form and the edges look set.
  • Gently flip with a spatula and cook for another 1–2 minutes until golden. Repeat with remaining batter, adjusting the heat as needed to prevent burning. Serve warm with toppings of choice.

Substitutions and Add-Ins:

Swap almond flour with coconut flour, but reduce the amount to 2 tablespoons and add 1 extra egg to keep the texture right.
