  • 1½ cups cold pineapple juice (fresh or bottled)

  • ½ cup chilled sparkling water or club soda

  • Juice of ½ a lime

  • 6–8 fresh mint leaves

  • Ice cubes (as needed)

  • Optional: 1–2 teaspoons honey or agave syrup, if your pineapple juice isn’t sweet enough

  • Pineapple wedges + mint sprigs for garnish

Directions

  • Muddle the mint leaves gently at the bottom of a large glass or shaker—just enough to release their oils, not tear them apart.
  • Add the pineapple juice and lime juice and stir well to combine. If your pineapple juice is more tart than sweet, you can add honey or agave syrup at this stage and mix until dissolved.
  • Fill serving glasses with ice cubes, then pour the juice mixture evenly between them. Top each glass with sparkling water or soda, and give it a gentle stir to blend everything while keeping that fizzy sparkle intact. Garnish with fresh mint and a pineapple wedge on the rim if you’re feeling cute.
  • Serve immediately and drink it slowly. Or fast. I’m not judging.
