A lot of my friends make fun of me for liking the Starbucks Pumpkin Spice Latte.
I get it, it’s mainstream but I can’t help it – I genuinely find it very cozy and tasty!
There’s just something about sipping this tall icy pumpkin spice cold brew that makes you feel like autumn is here.
It’s cozy, it’s creamy, it’s got that sweet cinnamon kick, and I wanted to make it at home.
This version is sugar-free, dairy-free, and ridiculously easy to make at home.
You don’t need to hit up a coffee shop or wait in line. All you need is a few pantry staples, some cold brew, and a dreamy fall mood.
It’s made with real ingredients, no weird chemicals, and only takes a few minutes to whip up.

Tips for Making It More Magical
Getting the balance of flavors and colors just right is key. Here are a few essential tips to keep in mind:
- Use a milk frother like this one for an ultra-smooth pumpkin mixture.
- Make your own cold brew with this cold brew pitcher.
- For a super creamy result, use barista-style oat milk.
- Add a pinch of sea salt to the pumpkin base for a salted caramel-like twist
- Don’t skip the whipped topping – it balances the bold coffee with a dessert-like sweetness
Let’s get to the recipe!
Pumpkin Spice Cold Brew
Course: DessertDifficulty: Easy2
servings5
minutesIngredients
1½ cups cold brew coffee (homemade or store-bought)
½ cup unsweetened almond milk or oat milk
2 tablespoons pumpkin puree (not pumpkin pie filling)
½ teaspoon pumpkin pie spice
1–2 tablespoons maple syrup or sugar-free sweetener (to taste)
½ teaspoon vanilla extract
Ice
Dairy-free whipped cream, for topping
Ground cinnamon or extra pumpkin pie spice, for garnish
Directions
- In a small jar or mixing bowl, combine the pumpkin puree, pumpkin pie spice, maple syrup, and vanilla extract. Whisk it well until it forms a smooth, creamy base. You can also use a handheld frother or mini blender if you want it extra velvety.
- Pour the cold brew coffee and almond milk into a tall glass filled with ice, then stir in your pumpkin mixture. Mix everything well until the drink turns that beautiful creamy caramel shade. It should look silky and perfectly fall-inspired.
- Top with a generous swirl of dairy-free whipped cream. Dust some cinnamon or pumpkin pie spice on top for that final magical touch. Optional but very worth it: tuck a cinnamon stick into the glass for visual flair and a whisper of extra spice.
- I personally love making this during fall and Christmas because it’s very cozy!
Variations and Substitutes:
Swap almond milk for coconut milk for a thicker, richer texture
Use monk fruit sweetener or stevia if you want it completely sugar-free
Prefer a hot drink? Just warm the coffee and milk together, then stir in the pumpkin mix (no ice needed!)
For extra indulgence, stir in a tablespoon of vanilla collagen creamer or protein powder
This is such a tasty drink.
I love that it looks like a complicated Pinterest drink, but secretly it’s the easiest thing ever.
Enjoy!
