I love making omelettes, sandwiches and wraps for lunch.
Since I work from home, these are quick to whip up. And this one I tried because I like adding some greens to my lunch. This sandwich is warm, melty and very satisfying!
I sometimes eat it in the kitchen when I’m cleaning up or doing some chores. It’s also lovely to snack on while sipping on a cup of warm tea!
Crispy golden bread, creamy melted cheese, and savory spinach all tucked together, it’s simple food that really delivers.
Although this is an easy recipe, I’m going to add some variations and substitutes at the bottom.

Tips to make it even better!

Spinach Cheese Grilled Sandwich

4 slices bread
1 cup spinach, finely chopped
1 cup shredded mozzarella or mixed cheese
2 tablespoons cream cheese
1 small garlic clove, minced
Salt to taste
Black pepper to taste

Directions
- Start by mixing the chopped spinach, cream cheese, garlic, salt, and pepper in a bowl until everything is evenly combined and creamy, making sure the spinach is well coated so it doesn’t dry out while cooking.
- Lay out the bread slices and spread the spinach mixture evenly over two slices, then sprinkle shredded cheese generously on top before closing the sandwiches with the remaining bread.
- Heat a pan over medium-low heat, butter the outer sides of the sandwiches, and grill them slowly, pressing gently, until the bread turns golden and crisp and the cheese inside is fully melted, flipping once for even browning.
- Remove from the pan, let the sandwiches rest for a minute so the cheese settles slightly, then slice and serve warm.
- You can make these everyday because they’re super healthy and easy to make!
Variations & Substitutions
Swap mozzarella for cheddar, gouda, or a cheese blend you like.
Use whole wheat or sourdough bread for a heartier sandwich.
Add sliced mushrooms or onions to the spinach mixture.
Replace cream cheese with ricotta for a lighter texture.
Make it vegan by using dairy-free cheese and plant-based butter.
