¾ cup unsweetened almond milk (or milk of choice)
½ cup plain or vanilla Greek yogurt (or plant-based yogurt)
1 tablespoon chia seeds
1 tablespoon maple syrup or honey
1 teaspoon vanilla extract
1 cup fresh strawberries, divided

Directions
- Start by washing and hulling your strawberries.
- Dice half of them and toss into a blender with the almond milk, yogurt, maple syrup, vanilla extract, and a tiny pinch of salt. Blend until smooth and light pink.
- In a jar or bowl, stir together the oats and chia seeds. Pour in the blended pink strawberry mixture and stir until combined.
- Fold in the remaining diced strawberries for texture. Seal the jar or cover the bowl and refrigerate overnight.
- By morning, you’ll have a creamy, dreamy, pastel-pink jar of strawberry oats that looks like dessert and tastes even better.
