Ingredients

  • 4 boneless skinless chicken breasts

  • 1 (14 oz) can crushed tomatoes

  • 1 teaspoon minced garlic

  • 1 teaspoon dried basil

  • ½ teaspoon Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ cup heavy cream or half-and-half

  • ⅓ cup grated parmesan cheese

  • 1 tablespoon tomato paste (optional, for deeper flavor)

  • 1 tablespoon olive oil

  • Fresh basil, chopped (for garnish)

Directions

  • Place the chicken breasts in the bottom of your slow cooker. In a medium bowl, whisk together the crushed tomatoes, garlic, dried basil, Italian seasoning, salt, pepper, olive oil, and tomato paste (if using).
  • Pour the mixture over the chicken, making sure it’s evenly coated. Cover and cook on low for 4–6 hours, or until the chicken is cooked through and fork-tender.
  • Once the chicken is done, carefully remove the breasts to a plate and stir the heavy cream and grated parmesan cheese into the sauce in the slow cooker.
  • Let it warm through for about 5–10 minutes with the lid off. Return the chicken to the sauce and spoon the creamy tomato mixture over the top. Garnish with freshly chopped basil and serve hot over pasta, mashed potatoes, rice, or low-carb noodles.
