My partner loves all things potatoes.

And I’ve been switching up the basic mashed potatoes recipe (don’t get me wrong, I love mashed potatoes as is), but I have a nice garlic herb mashed potato recipe here (it’s not vegan).

This year, I’m loving this vegan version!

These vegan mashed potatoes are everything I want in a holiday side dish, creamy, buttery, fluffy, and honestly just as good as classic mashed potatoes.

They come together with simple ingredients, they’re naturally comforting, and they pair beautifully with literally anything on the table.

I love making these for Christmas dinner because nobody ever guesses they’re dairy-free. They’re rich without being heavy, smooth without any fuss, and they taste like pure cozy comfort.

Ingredients

  • 2 lbs (900g) potatoes, peeled and cut into chunks (Yukon Gold or Russet)

  • 4 tbsp vegan butter

  • ½–¾ cup warm unsweetened oat milk (or almond milk)

  • 3–4 tbsp vegan sour cream or full-fat coconut cream

  • 1 tsp salt (plus more to taste)

  • ½ tsp garlic powder (optional)

  • Fresh parsley for garnish

Directions

  • Add the peeled potato chunks to a large pot of salted water and bring to a boil. Cook for 12–15 minutes until the potatoes are very soft and easily pierced with a fork.
  • Drain well and return them to the warm pot to steam off excess moisture. Add the vegan butter, vegan sour cream, garlic powder, and most of the warm milk.
  • Mash until smooth and creamy, adding more milk as needed to reach your desired consistency. Taste and adjust the salt.
  • Transfer to a bowl, swirl the top, add a pat of vegan butter, and finish with fresh parsley.

  • This is a lovely Christmas Dish to serve.

What to Serve with Creamy Garlic & Herb Mashed Potatoes

• Add roasted garlic for deeper flavor.
• Mix in chives or green onions for a herby twist.
