Ingredients

  • 1 teaspoon garlic powder

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • 1 cup basmati rice (rinsed and drained)

  • 2 ½ cups low-sodium chicken broth

  • 1 lemon (zested and juiced)

  • 2–3 lemon slices for garnish

  • 2 tablespoons fresh parsley or thyme, chopped

Directions

  • Heat olive oil in a large skillet or dutch oven over medium heat.
  • Season the chicken with salt, pepper, garlic powder, thyme, and paprika, then sear it on both sides until golden brown (about 3–4 minutes per side). Remove the chicken and set aside.
  • In the same pot, add the rinsed rice and toast for about a minute until lightly golden and fragrant — this adds a beautiful nutty flavor.
  • Pour in the chicken broth and lemon juice, stirring to loosen any flavorful bits stuck to the bottom.
  • Return the chicken to the pot, cover with a lid, and simmer on low for 20–25 minutes until the rice is fluffy and the chicken is tender.
  • Garnish with lemon slices and fresh herbs before serving.
