Peppermint Mocha Overnight Oats

½ cup rolled oats
¾ cup milk (any kind — oat, almond, or regular)
2 tablespoons Greek yogurt (or coconut yogurt for dairy-free)
1 tablespoon chia seeds
1 tablespoon cocoa powder
½ teaspoon instant coffee or espresso powder
1 tablespoon maple syrup (or honey)
¼ teaspoon peppermint extract (start small — it’s strong!)
¼ teaspoon vanilla extract
Pinch of salt
Optional toppings: crushed candy canes, chocolate chips, whipped cream, or cacao nibs
Directions
- In a jar or small bowl, combine oats, chia seeds, cocoa powder, coffee, and salt. Pour in milk, yogurt, maple syrup, peppermint extract, and vanilla extract. Stir until everything is smooth and well mixed — no dry cocoa pockets left behind.
- Cover and refrigerate overnight (or at least 6 hours). The oats will soak up the liquid and become thick, creamy, and full of that peppermint mocha flavor.
- In the morning, stir your oats and adjust consistency with a splash of milk if needed. Add your favorite toppings — crushed candy canes, chocolate chips, or even a swirl of whipped cream — and enjoy your cozy, Christmas-in-a-jar breakfast.

Substitutions and Add-Ins:
Skip the coffee if you’re caffeine-sensitive — it’ll still taste like minty hot chocolate.
